While the Bar B Barn closed its Dollard-des-Ormeaux location in 2024, its signature recipe lives on. The secret to this specific style relies on a heavily seasoned savory rub, a multi-hour slow braise to guarantee tender meat, and a sweet-yet-tangy tomato-based glaze applied at the very end.

Ingredients
The Meat: 2 full racks of pork back ribs (ideally trimmed)
The Dry Rub:
2 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp brown sugar
1 tsp salt
1 tsp black pepper
½ tsp cayenne pepper (optional)
The Braising Liquid: 1 cup beef broth mixed with ¼ cup apple cider vinegar
The “Secret” Barbecue Sauce:
1 cup ketchup
¼ cup molasses
2 tbsp brown sugar
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tsp garlic powder
½ tsp liquid smoke

Instructions
Prep and Season
Peel the thin, papery membrane off the back of the rib racks. Combine all the dry rub ingredients in a small bowl. Rub the seasoning generously over both sides of the ribs.
The Slow Braise
Preheat your oven to 300°F (150°C). Place the ribs in a deep baking dish or roasting pan. Pour the braising liquid (beef broth and cider vinegar) into the bottom of the pan around the ribs, taking care not to wash off the rub. Cover the pan tightly with a double layer of aluminum foil to lock in the steam. Bake for 2.5 to 3 hours until the meat is incredibly tender and starts pulling away from the bone.
Make the BBQ Sauce
While the ribs are baking, combine all the sauce ingredients in a small saucepan over medium-low heat. Simmer for about 10–15 minutes, stirring occasionally, until the sauce thickens and the sugars melt together.
The Finish Glaze
Carefully remove the ribs from the oven and discard the foil. Slather a thick layer of your prepared barbecue sauce over the top of the ribs. Turn your oven to Broil (or fire up a grill to medium-high heat). Broil the ribs for 3–5 minutes until the sauce is bubbly, caramelized, and slightly charred at the edges. Watch closely so the sugars do not burn!
Let rest for 5 minutes, slice, and serve with plenty of napkins.

He bought the original kitchen equipment from the Bar B Barn estate and serves the exact same ribs alongside traditional Filipino dishes.
